Good winter veggie recipe

Roasted Winter Veggies

Preheat oven to 425
Fill a cookie sheet with 1.5 inch cut winter veggies of any combination of peeled potatoes, unpeeled red potatoes, peeled sweet potatoes, turnips, parsnips, butternut squash or winter squash. Sprinkle lightly with virgin olive oil, salt, pepper and thyme. Bake for 40-45 minutes.
