Lemon Blueberry Cake


I recently came across several variations of this recipe on Pinterest. I decided to make my own version using a lemon cake mix instead of doing a scratch cake.

1 Duncan Hines lemon cake mix
1 pint fresh blueberries
1 Duncan Hines lemon frosting

Mix cake mix according to directions. Fold in one pint of fresh blueberries and bake according to directions. Instead of two layers I baked mine in a 9 x 13 pan. The berries cook nicely and sink toward the bottom keeping the cake moist.

After the cake has cooled put on lemon icing. Enjoy!

There are many variations for this cake, a layer cake looks nice. I’ve also saw a three layer cake with the top and bottom layers being lemon blueberry and the middle layer being plain vanilla. This recipe makes gorgeous cupcakes and I’ve saw other berries substituted for blueberries but I think the blueberries are a perfect compliment to the lemon cake on a hot summer day.
